Ellison
Meat Company prides itself on producing safe and high
quality meat products. Our commitment to food safety has
been evident throughout the years. In 1986, Ellison Meat
Company was among the first to join USDA's Total Quality
Assurance (TQC) Program. The Total Quality Assurance
Program was different because TQC plants wrote their
own food safety programs addressing: sanitation, operating
procedures, and quality assurance functions. TQC was
the first stage in which later evolved into HACCP - Hazard
Analysis and Critical Control Points. Ellison Meat Company
was approved in 1997 as a model HACCP facility. HACCP is a
scientific based food safety program designed to address
potential hazards that may be likely to occur. Each
processing step is critically evaluated to ensure these
hazards are controlled. Ellison Meat Company also
collaborates with outside expertise, like industry
associations, USDA, and research scientists to stay on the
forefront of food safety and quality. With Quality
